Default Coolant problems

since i've bought my used car i've always have problems with temp... this is what happens...

when the level temp goes 3/4, the radiator's fan starts, and quickly goes cool, at this time some water was wasted on to deposit, wich is already full.
after some minutes, level temp goes high, and i need to accelerate to 3000 rpm and again level temp goes cool again...
theres no water wasting in no place, just by deposit water when the temp goes high.
